A pickle is a seasoned relish consisting of vegetables or fruits preserved in vinegar or brine. In the north east of India an organic vegetable is freshly plucked from the vegetable farms to turn them into lip smacking pickles.
Many fruits and vegetables that are used to make pickles in the north east, include, cucumber, carrot, cherries, ginger, mushrooms, onions, peas, radish, squash and Tomatoes. Vegetable Pickles have a long shelf life.
The spices used in making these pickles are traditionally prepared by the women folk. The fresh herbs and spices give the pickles a heavenly fragrance and you cannot stop at just a single pickle from the jar.
